There is every chance you will be seeing purple tomatoes in your supermarkets in the not so distant future. But why? You may ask. Well they are actually being developed for health reasons, the genetically modified tomatoes dark pigment is expected to give the same health supplements as fruits such as berries but will be able to be consumed in many more every day dishes.
Although the idea was born in Britain, Canada is leading the way in production, with the first batch of the purple juice ready to go. The purple tomatoes have the pigment anthocyanin which is well known for many health benefits, including helping fight cancer.
If things go to plan the tomatoes will benefit many of the foods we eat, including sauces, ketchups, pizza toppings etc. improving the nutritional value of every day foods.
