TOAD IN THE HOLE RECIPE Monday August 03rd, 2009

100g plain flour
1 egg
150ml milk
150ml water
12 good quality pork sausages
1 onion sliced thinly
Black pepper


Preheat the oven to around 200C or Gas mark 7. Evenly space sausages in a baking tray and scatter the onions over them before drizzling oil over everything. Place in the over for 20 minutes. To make the batter, first sift the flour into a mixing bowl and make a well in the centre. Crack an egg into the hole. Beat the mixture gently whilst adding equal measures of water and milk gradually. After half the liquid is added beat the batter for 2 minutes before adding the rest. Season well with black pepper. At the 20 minute mark remove the tray from the oven stir the batter and quickly pour it over the sausages and onions. Place the tray back in the over and bake for 35-40 minutes or until the batter is risen and golden brown.

Serve with gravy, peas and mashed potato.
